FACT FOOD #1978

Artichoke is a form of thistle native to the Mediterranean and is known for its edible parts being the petals around the unopened flower. It is also the name of another sunflower plant with edible tubular (a root vegetable) commonly known as Jerusalem artichoke. Jerusalem in the name can be attributed to the corruption of the Italian word for sunflower ‘Girasole’.
