The recipes for Iced Tea dates back to the 1870’s as published in the cook books Buckeye Cookbook by Estelle Woods Wilcox (1876) and Housekeeping in Old Virginia by Marion Cabell Tyree in 1877. Although it was offered in many of the hotels and at some of the railway stations, the popularity of this drink increased courtesy of a English tea concessionaire Richard Blechynden. After having failed to entice the fair goers at the 1904 World’s Fair in St.Louis to drink his hot beverage (in the sweltering summer heat), he poured the tea over ice and sold it cold.
