Basmati, a variant of rice is typical to South Asia namely India and Pakistan. The name ‘Basmati’ comes from the Sanskrit word ‘vasmati’ meaning ‘fragrant’. Mainly cultivated in the Indian sub-continent, India accounts for 65% of supply in this trade. Basmati, known for its aroma is caused by the natural aroma compound 1-acetyl-1-pyrroline which is also found in cheese, fruits and few other cereals.
