The word ‘fondue’ comes from the French verb fondre meaning ‘to melt’. The word in its noun form was first used in 1735 Vincent Ia Chapelle’s ‘Cuisinier moderne’. However the earliest known cheese recipe was mentioned in a 1699 book in Zürich, under the name ‘Käss mit Wein zu kochen’ (to cook cheese with wine).
